Faro is the grain

Farro is one of the oldest cultivated grains on earth — nutty, chewy, and eaten across the Mediterranean since long before anyone called it a superfood.

That’s the whole idea behind the food here. The ingredients aren’t new. The way we serve them is: fast, bright, built in front of you, and priced like lunch.

How we run the kitchen

Nothing sits overnight

Produce is cut, dips are whipped and proteins are marinated on site each morning. What doesn't sell doesn't come back tomorrow.

You can see everything

The whole line is in front of you. No mystery sauces, no back-of-house assembly — you watch your food get built.

Real portions

Fresh and healthy shouldn't mean leaving hungry. Half-and-half on the protein is always fine, and every topping is included.
